Production department
The production process (including cleaning, freezing and packaging of cephalopods) takes place at the production plant located inside our main facility (as mentioned earlier). This process folds through different stages:
• CLEANING – cephalopods are eviscerated by hand at our laboratory and then washed in appropriate tanks with turbulent water. Then the product is selected according to size and stored in a freeze room at a temperature ranging between 0°C + 4°C.
• FREEZING – The freezing process takes place in a tunnel where the internal temperature reaches – 40°C. Quick freezing prevents deterioration of the finished product due to water crystallization. Glazing is the process of coating the frozen product with a layer of ice to preserve it effectively.
• FINISHED PRODUCT AND PACKAGING – After freezing, the finished product is packaged and stored in freeze rooms at a very low-temperature (– 18°C), where it remains until shipping.
